Capsicum Rice (Bell Pepper Rice)
Sona masoor Rice (or) Basmathi Rice -1 cup
Capsicum (multi color bell peppers ) - 3(cut into all types)
Grated coconut – 1 tbsp
Cashews – 1 tbsp (optional)
Oil – 2 tbsp
Turmeric powder – 1/4 tsp
Garam masala -1/2 tsp
Salt – to taste
To grind:
Dry red chillies- 6
Cinnamon stick – 1 “
Clove – 1
Sesame seeds – 2 tsp
Peanuts -5 tbsp
Mustard seeds- 1tsp
Curry leaves – a few
Dry roast all the ingredients for grinding to a slightly coarse powder and keep it aside.
Cook the basmathi rice with 1 and 1/2 cup of water.
Heat oil in a pan and add the capsicum with little salt and turmeric powder and fry till they become soft.
Then add the ground powder and garam masala followed by the coconut and fry for two minutes.
Turn off the heat and mix the rice to the mixture.
Roast the cashews to the rice and serve hot with raitha...
