Preparation :
- Heat 2 tbsp of oil in pan over medium heat.
- Add mustrad seeds,cumin seeds,channa dal,urad dal ,curry leaves , when they are splutter add onions ,fry untill onions turns golden brown color.then add ginger garlic paste.
- Add tomato slices,salt,turmeric fry for 5 minutes.
- Now take each brinjal and cut from the base end (opposite side of stem) and make a slit towards stem side but not all the way through i.e slit each brinjal into four sections lengthwise without cutting off the crown.
- Now add the brinjals ,cook it untill brinjal soft or it turns color,Don't add water.
- Place Tamarind pulp,coconut paste,1 cup water,salt to taste cook for 10 to 15 min in low flame.
- Now add coriander powder, garam masala ,chilie powder.
- Garnish with Coriander leaves.
