Ingredients :
Red chillies - 2 cups or (50 g)
Coriander seeds -1 cup
Bengal gram (chana dal) -6 tbsp
Red gram ( kandi pappu) -4 tbsp
Black gram (urad dal )-2 tbsp
Hing -3 tsp
Fenugreek (menthulu) -1 tsp
Pepper corns -1 tsp(optional)
Turmeric powder -1 tsp
Oil -1/2 tsp
Preparation :
Cut the stalks of chillies.Take 1/1 tsp of oil and sprinkled over chillies are coated with a thin firm of oil.
Roast over a low heat till crisp.Add hing .
Mix well and remove from heat.Mix all the dals with turmeric and roast till light brown.
Roast coriander with fenugreek and pepper .
Cool and mix all these together.Place half the mixture in the cup fitted with grinding blade .Grind at speed 1till ingredients are crushed .
Then Grind at speed 3 till they are powdered to the consistency of very fine sand ,stopping the mixer for a while twice in between .
Repeat with remaining mixture .
cool and store in a dry airtight container..
Note:
The sambar powder varies from state to state ,family to family.This recipe is just one of them.The grinding procedure is same for any recipe.
