Beans Coconut Curry

 Ingrediants  :
  • Beans - 2 cups Washed and chopped
  • Oil - 2 to 3 tsp
  • Mustard - 1/4 tsp
  • Cumin Seeds - 1/4 tsp
  • Red chillies - 2 
  • Onions - 1  Medium - Finely chopped
  • Curry Leaves - 2
  • Grounded Coconut - quantity as required - minimum of 1/2 cup
  • Turmeric Powder - 1/4 tsp 
  • Chilli powder -little bit
  • Coriander Powder -1 tsp
  • Salt - As required
Method :
 
  • Heat oil in a pan, add  mustard seeds, cumin seeds and wait till the mustard pops down.
  • Later on add red chillies, finely chopped onions, curry leaves and saute them, till the onion pieces turn transparent.
  • Later on add chopped beans, turmeric powder, chilli powder,coriander powder, salt and stir them for a while.
  • Add required water to the mixture, close the lid and allow the content to boil.
  • Once the pieces turn soft, add grated coconut and stir the entire mixture for 2 to 3 minutes.
  • Finally add salt if required and switch off the stove.
  • Serves as a healthy side dish for roti and it can be taken along with plain rice as well.

Semiya (Vermicelli) Upma

Ingredients:
Oil-1 tbsp
Finely Chopped Mixed Vegetables(onion, carrot, beans,tomato, peas)-1 cup
Vermicelli(Semiya)-1.5 cups
Salt to taste
Turmeric powder- a pinch
Water-2 3/4 cups
Lime juice-1 tsp

Seasoning:
Cumin seeds-1/2 tsp
Mustard seeds-1 tsp
Curry leaves- a few
Urud dal-1 tsp
Green chilli chopped
Ginger chopped-1 tsp
Hing-pinch






Method:


Heat oil in a pan. Add ingredients listed under "seasoning".
When mustard seeds crackle, add onion and chilli. Saute for 2 minutes. Add rest of the veggies and sprinkle salt and turmeric powder.
Saute for 2-3 minutes. Set aside.
In the same pan, roast vermicelli on low flame. At the same time, bring water to boil.
When vermicelli turns golden brown, pour boiling water and mix well. Sprinkle salt. Cook till it absorbs all the water. Add the veggies, lime juice and coriander leaves and mix well.
Serve with pickle/yogurt .

Yu choy Dal

Ingredients:
 1 cup toor dal/red gram lentil
5-6  yu choy trim the tough ends
1/2 red onion, sliced
3-4 green chillies, sliced
1/2 tsp turmeric powder/pasupu
1 tsp red chilli powder/yendu mirapakayalu
2 tsp tamarind pulp
 







 for tempering/ tadka /poppu:
1/2 tsp mustard seeds
1/2 tsp urad dal/black gram
1/2 tsp cumin seeds
2-3 dried whole red chillies
few curry leaves
a pinch of hing
Salt as per taste
1tbsp oil






Method
Chop coarsely yu choy and pressure cook them with toor dal/lentils along with turmeric powder, onions, green chillies, and chilli powder. Cook upto 3-4 whistles. Add tamarind pulp, salt to it and mash the contents.
In a deep pan heat oil, add mustard seeds, let it splutter then add urad dal/black gram lentil,cumin seeds, curry leaves,  red chillies,  and fry for a min. Add hing and pour the entire yu choy dal and mix well. Let it simmer for 2 more mins.
Serve hot with plain rice or rotis ..

Paneer Butter Masala (Cottage Cheese Curry)

Ingredients 

1 cup paneer 
2 medium sized onions 
2 tsp ginger-garlic paste
2 tsp red chilli powder 
4 ripe tomatoes

2 bay leaves
3 green chilli
3 tbsp cashew nut (grind to smooth paste with little water)
1/2 tsp coriander powder
1/4 tsp turmeric powder 
1 1/2 tsp  garam masala powder 
salt to taste
3 tbsp butter
Coriander leaves for garnish

Preparation :

  • Heat a tbsp of ghee and fry the paneer cubes to golden brown ..
  • While the paneer fries, bring one cup of water to boil and switch the flame off. To this add the fried paneer cubes and let it sit for 5 min in.
  • In a pan / kadhai heat 2 tbsp of butter on medium low flame. Add the ginger-garlic paste , onions and  tomatoes to the butter, then add the cashew nut paste ,and fry for 5 min stirring frequently till the curry starts turning brown in color and the raw smell disappears.
  •  Add fried paneer, mix gently and let it cook for another 5 min.
  • Now add 3/4 cup of water, and cook on medium flame till the gravy turns to a thick consistency. Check the salt and add if required.
  • Cook for another minute or two before turning off the flame.
  • Let it stay for at least 10 minutes and garnish with freshly chopped coriander before serving....
  • Enjoy with ur family and friends....

Cauliflower Masala Curry

  • 1 cauliflower 
  • 1 big size onion finely chopped
  • 5 tomato finely chopped
  • cilantro
  • 2tsp yogurt
  • spice powder: 1 tsp of Red chili powder and Coriander powder.
  • ½ tsp of turmeric and cumin powder.
  • Grind : 1 tsp poppy seeds and 2 tsp of cashews grind to a fine paste
  • Grind : 3 pods of Garlic, 2 green chilies and a small piece of ginger grind to a fine paste
  • Salt for taste

 
Preparation:

  • Heat oil in a pan and add the chopped onions and saute till golden brown.
  • Add ginger, garlic, green chili paste and sauté them. Add the chopped tomatoes and sauté for 2 minutes. Add all the spice powders red chili powders, coriander powder, turmeric , cumin powder, salt and cook till the tomatoes absorbs the flavor.
  • Add the yogurt and saute till the yogurt is well blended. Now add the cauliflower florets and sauté them well turning all sides to cover the masala and cook them covered for 2 minutes.
  • Add the cashew poppy seed paste and ½ cup of water. Cook them covered for 5 minutes.
                    Garnish with cilantro leaves and serve hot.

Gutti vankaya kura (Egg plant curry)


  • 6 Egg Plants (Gutti Vankayalu)
  • 2 tbsp Oil 
  • 2 Tomatoes
  • 1/2 Lemon size Tamarind
  • 1/4 tbsp Turmeric
  • 1 big Onion
  • 1/2 tsp Mustard seeds
  • 1/4 tsp Cumin seeds
  • Curry Leaves
  • Coriander leaves(kothimeera)
  • 1 tsp Channa dal
  • 1 tsp Urad dal
  • 2 tbsp Coriander powder
  • 1 tbsp Garam masala
  • 1/2 tsp Chilie powder
  • 1tbsp Ginger and Garlic paste
  • 3 tbsp Fresh Coconut Paste
  • Salt to taste


  • Preparation :

    • Heat 2 tbsp of oil in pan over medium heat.
    • Add mustrad seeds,cumin seeds,channa dal,urad dal ,curry leaves , when they are splutter add onions ,fry untill onions turns golden brown color.then add ginger garlic paste.
    • Add tomato slices,salt,turmeric fry for 5 minutes.
    • Now take each brinjal and cut from the base end (opposite side of stem) and make a slit towards stem side but not all the way through i.e slit each brinjal into four sections lengthwise without cutting off the crown.
    • Now add  the brinjals ,cook it untill brinjal soft or it turns color,Don't add water.
    • Place Tamarind pulp,coconut paste,1 cup water,salt to taste cook for 10 to 15 min in low flame.
    • Now add coriander powder, garam masala ,chilie powder.
    • Garnish with Coriander leaves.

    BREAD UPMA

    Bread - 10 slices 
    Vegetable Oil -2 tbsp
    Tomatoes - 2 
    Onions- 2 
    Red Chilie -2
    Chilie powder - 1 tsp 
    Garam masala - 1/2 tsp 
    Peanuts -2tbsp
    Coriander and cumin powder - 1 tbsp 
    Mustard seeds -1/2 tsp
    Cumin seeds -1/2 tsp
    Hing -pinch
    Peas ,Broccoli florets
    Lemon juice -1tbsp
    Salt - for taste

     


    METHOD :

    Dice the bread slices into medium sized cubes.  

    Chop onions finely and keep it aside. 


    Take a pan and add few tsp of oil.Add mustard,cumin and red chilie,hing when they splutter,
    drop in the chopped onions and fry until golden brown. Add the tomato pieces ,Chilie powder, garam masala ,coriander , cumin powders and salt to it and allow it to cook for a while. Simmer the stove and add the lemon juice to it and mix well. 

    Now toss in the bread squares and give a quick stir. Once the bread gets coated with the gravy, switch off the flame . Garnish with cilantro.




                  Serve hot and enjoy eating -:) 

    Capsicum Curry (Bell pepper )


    • 2 Big size Capsicum or Bell pepper
    • Onions -1
    • Green chilies -2
    • Rasam powder -1 tsp
    • Chili powder-1/2 tsp
    • Mustard seeds -1/2 tsp
    • Cumin seeds -1/2 tsp
    • Flax seeds -1 tbsp
    • Salt to taste
    • Oil -2 tbsp
    • For garnish cilantro

    Preparation :

    • Wash the capsicum (bell peppers)thoroughly,chop into small size,and  chop onions also,keep a side.
    • Heat oil in a thick bottom pan ,add mustard seeds,cumin,red chili and flax seeds,when they splutter add onions green chilies and saute until it is semi cooked.
    • Then add chopped capsicum stir well.
    • After capsicum cooked  add the rasam powder,salt and mix well.sprinkle water in between and mixing as required.
    • Cover the lid,in between once the curry is cooked garnish with cilantro..
    • Served with roti and rice too.

    చపాతీలు కొంతమందికి అసలు మెత్తగా రావు.అప్పుడే వంట చేయటం మొదలు పెట్టిన వారికైతే ఇది ఒక  పెద్ద ప్రయాగం లాంటిది ,మొదట్లో నేను కూడా అలాగే అనుకునే దాన్ని .కానీ చాలా తేలిక పని అంటే చపాతీనే అని నేను చెప్పగలను....

    చపాతీలు మృదువుగా రావాలంటే పిండి కాలిపే సమయం లో పిండిలో water  కి బదులుగా పెరుగు వేసి చూడండి.
    తినేటప్పుడు చాలా మృదువుగా ఉంటాయి .

    Tomato Dal

                        Thoor  dal (కందిపప్పు ) - 1  cup
                                 Fresh Tomato -1 1/2cups
                                        Water -2 cups
                                  Turmeric(పసుపు )-1/2 tsp  
                                              Onions -1
     Green  chillies -2  ; Oil-2tbsp  ; Mustard seeds-1/2tsp  ; Cumin seeds-1/2tsp 
                                             Urad dal-1/2 tsp
      Dried red chilies (broken into small pieces )-3  ;  Fresh curry leaves- 2
                                          Red chillie powder -1tsp   ;
                                                  Salt to taste.
                                              Cilantro for garnish

                                                             
                                           
    Preparation  :


     1. Wash and pressure cook dal  ,chopped  tomato,onions,green chillies,turmeric together with  3 cups of water till 3 whistles .

    2. When the pressure is released, remove the lid add salt ,red chillies powder.

    3. Heat oil in a Pan add mustard seeds, cumin, red chillies,curry leaves and fry them to turn brown .

    4. Now add dal to this and cook in low heat with lid covered for 5 minutes.Garnish with cilantro.


    5. Serve hot with rice,ghee..... 

        (If  u like more  sour u  can  put  little bit  tamarind  also )

    Spinach Dal (Palakura Pappu)

                      Thoor  dal (కందిపప్పు  మరియు  lentils)- 1  cup
                       Fresh spinach (పాలకూర) -1  bunch (ఒక కట్ట)
                                        Water -3 cups
                      Turmeric(పసుపు )-1/2tsp ; ; Tamarind -6  tbsp
                                              Onions -1
     Green  chillies -5  ; Oil-2tbsp  ; Mustard seeds-1tsp  ; Cumin seeds-1tsp 
                                             Urad dal-1tsp
      Dried red chilies (broken into small pieces )-3  ;  Fresh curry leaves-5
                                        Red chile powder -1tsp   ;
                                               Salt to taste


                                           

    Preparation :

    Kothimira Tomato pachadi

    Coriander( Kothimira )- 1/2 cup chopped
    Tomato - 5 to 7 medium sized
    Red chillies -3
    Garlic pods - 2-3 medium
    Tamarind water - 3 tbsp
    Green chillies -4 or 5
    Oil - 3 tsp
    Cumin seeds - 1tsps
    Mustard seeds- 1tsp
    Urad dal -1tsp
    Hing- pinch
    Salt to taste


    Method :

    1.Heat oil in a pan and add coriander, tomato,garlic pods ..
    2.Let them cook on slow flame.
    3.Remove from the fire once they become soft (Takes roughly 7 min),remember don’t overcook them.
    4.Take mixie jar,add above mixture and tamarind water, salt. Grind them.
    5.Heat oil in a pan for the tempering, add the mustard seeds, let them pop and add the split urad dal and curry leaves and fry till the dal turns red. Lastly add the hing and immediately add this seasoning to the ground pachadi. 
    Serve with hot rice or dosa
                            

    Puffed Rice (Mamarala Upma)

    Oil - 1tbsp 
    Puffed  Rice - 4  or  5 cups
    Chanua dal (పచ్చిశెనగ పప్పు) - 1tsp
    Urad dal (మినపప్పు) - 1tsp  , Mustard  seeds (ఆవాలు) - 1tsp ,Red  chilli  - 2
    Cumin  seeds (జీలకర్ర )- 1tsp ,  Hing -pinch  , 
    Peanuts (వేరుశెనగ పల్లీలు) -2tbsps,
    Cashew nuts (జీడి పప్పు)-2tbsps , Salt  -to  taste,
    Curry leaves-2,Cilantro-pinch
     onions -1,Green  chillies -2,carrot -5  or  6,peas (బటాణి)-littlebit,avocado (అవకాడో)-1,tomato  -1 

     Preparation :

    First, take a big bowl, fill half of it with tap water and add puffed rice to the water.Soak puffed    rice in water for a minute or less.
    Remove them from water by taking handfuls and firmly squeezing the water from them by pressing the hands together tightly.
    Remove them all from water in this way and put them in a bowl.
    Heat one tbsp of oil in a pan,and add mustard seeds, cumin, red chillies,chana dal,urad dal and curry leaves.
    When chana dal turns light brown, add green chillies and chopped onion.When onion becomes golden colour,add chilies, tomato,carrots,peas,avocado fry 10 mins in a mediuam heat, add  puffed rice, turmeric powder, and salt.Mix Well..
    serve hot with cilantro..
